Freeze-dried broccoli
Florets and stems have different shapes, so separating them can make a batch easier to dry and use.
The short take: Small, evenly prepared florets are easier to assess than a mixed tray of large and tiny pieces.
What to know
Wash carefully, trim tough stem portions, and separate large florets into more consistent pieces. Commercial processing often blanches broccoli to manage enzymes and preserve quality, but the exact preparation depends on product specification and process validation.
In practice
Freeze-dried broccoli is crisp and light. It can be crumbled into savory mixes or rehydrated for soups and sauces; the branching florets trap air and can also trap crumbs, so gentle packing helps retain shape.
Keep in mind
Drying is not sterilization. Keep raw produce separate from ready-to-eat product, use clean equipment, and rehydrate with safe water under conditions appropriate to the recipe.
Practical checks
- Separate stems and florets for more predictable results.
- Avoid compressing delicate crowns in the package.
- Discard product if a seal fails or moisture is evident.
