Fruit / Practical reference
Freeze-dried pineapple
A juicy fruit with a bright acid edge, pineapple rewards a clean cut and a little patience at the center.
The short take: Remove tough core sections and check thick chunks all the way through.
What to know
Pineapple’s firm fibers and juicy flesh call for pieces that are similar in size. Remove the skin and tough core, then cut rings or chunks to suit the intended use. A thick wedge can look finished on the outside while retaining moisture inside.
In practice
Its sharp, sweet flavor works well in snack mixes, desserts, and sauces. Freeze-dried pineapple is brittle rather than chewy and rehydrates readily; add it to wet foods near the end if you want some shape to remain.
Keep in mind
Use clean knives and boards, separate sound flesh from damaged areas, and avoid overloading the tray. The dry product still needs protection from humidity and oxygen to preserve its crispness and color.
Practical checks
- Use a consistent cut for a more even cycle.
- Test the thickest piece from each tray area.
- Store away from warm, humid conditions.
