Freeze-dried blueberries
A small berry with a waxy skin and a tiny interior: piercing or cutting can help the process reach the center.
The short take: Whole blueberries can dry unevenly; preparation and a deliberate center check are key.
What to know
Blueberries have a skin that can slow moisture movement. Some processors score, halve, or otherwise prepare berries to shorten the path from the center. Which approach works depends on berry size, ripeness, load depth, and the equipment cycle.
In practice
Dried berries are crisp and useful in granola, trail mixes, pancakes, and sauces. Their sweetness can seem more pronounced per handful because dried fruit weighs much less than fresh fruit; compare portions by more than volume.
Keep in mind
A brittle exterior does not prove the core is dry. Test representative pieces from different tray locations, allow for a cool-down check, and package only when the batch and handling environment are suitably dry.
Practical checks
- Uniform berries help make a uniform batch.
- Sample the largest fruit, not just the smallest.
- Keep sealed away from steam and countertop humidity.
