Freeze-dried raspberries
The berry’s delicate hollow structure preserves a lively tartness and a fragile, almost weightless crunch.
The short take: Raspberries are naturally fragile; gentle handling matters before and after the dryer.
What to know
Whole raspberries can retain a recognizable shape because their drupelets surround a hollow center. That same structure makes them easy to crush during washing, draining, loading, and packing. Start with sound fruit, drain it carefully, and avoid stacking pieces deeply.
In practice
The tangy flavor suits chocolate, yogurt, pastry, and savory sauces. Crumbled raspberry is a potent garnish, but its fine particles absorb ambient moisture faster than an intact berry. Add crumbs close to serving or keep them tightly closed.
Keep in mind
The dryer removes ice by sublimation under vacuum; it does not repair bruised or moldy fruit. Sanitary preparation, a validated process, and a protective final package remain essential.
Practical checks
- Handle in shallow trays.
- Keep powder or crumbs sealed between uses.
- Check the center of larger berries for a dry, brittle texture.
